Meatball Day, 3/9.


In honor of national meatball day, here's a simple receipe.

1 pound of ground beef

1/2 pound of ground veal

1/2 pound of ground pork

2 cloves of garlic, minced

2 eggs

1 cup of freshly grated Romano cheese

1 1/2 teaspoon of chopped Italian parsley leaf

2 cups of stale Italian bread, crumbled

1 1/4 cup of lukewarm water

1 cup of olive oil

salt/pepper

* Combine beef, veal and pork in large bowl.  Add garlic, eggs, cheese, parsely, salt and pepper.

* Blend bread crumbs into meat mixture.  Slowly add water, 1/2 cup at at time.  The mixture should be very moist but still hold it's shap.  Shape into meatballs

* Heat olive oil in a large skillet.  Fry meatballs in batches.  When meatballs are brown and slightly crisp remove from heat and drain on paper towel.

Feel free to add to a pot of sauce on low to keep them hot.
